I came across the most amazing blog. I know… I tend to say that about a few blogs. But it’s so true! Just look at it: http://www.roostblog.com/.
The photos are so beautiful, which make the recipes mouth watering. (I so wish that I had one of those nice cameras… sigh!) As I was reading recipe after recipe and admiring photo after photo, I stopped at the Herbed Flatbread with Prosciutto, Arugula Pesto, and Sheep’s Milk Cheese recipe. I love prosciutto and arugula pesto! I decided to make it for dinner tonight.
The recipe for the flatbread is super simple. You just mix almond flour, fresh sage and oregano, salt, baking soda, eggs, and oil… and voilà, you have the flatbread dough. I was excited that the dough did not require yeast. Yeast really intimidates me. I once tried making bread and it was a failure. That was my last attempt at bread making.
But this flatbread came out beautifully and super delicious!
I topped it with my own arugula pesto, prosciutto, goat cheese, and a drizzle of this really nice balsamic vinegar. When Joel joined me at the dinner table, he said “WOW! You’ve really outdone yourself this time Veronica.” Nice! :)
I cannot wait to try some of the other recipes. No worries… I will definitely let you know how they are.

Wonderful recipe – I also like your blog. My cousin’s wife, in Switzerland, made a flax seed cracker, and I’ve asked her to send me the recipe. It is without yeast as well. If I receive it soon I’ll forward it to you.

Received her mother’s recipe – KNÄCKEBROT from Gabriella

200 gr big oat flakes
200 gr spelt, finely ground
100 gr buckwheat
50 gr flaxseeds
50 gr sesame seeds
4 table spoons olive oil
1 ½ tea spoons coriander powder
2 tea spoons salt
8 dl water

Mix all ingredients and let it rest for an hour. If the dough is to thick, add some water.
Prepare 3 oven plates and cover them with paper sheets .Pour the dough into them and flatten it going to the borders and so it is quite thin. Bake with air-oven all 3 in once.
1.Temperature 180 celsius (350F) for about 15 minutes.
Take out and cut into even pieces
2.Bake again at 180 degrees for about 20 minutes until the cover seems dry and starts getting brown.
Take out the plates, pull the papers in the bottom end and turn over quickly. Delicately take away the paper sheets.
3.Bake one more time for 10-15 minutes at 150 celsius (300F), so that the bottom part also gets dry and brown.
The “Knäckebrot” must be very dry, so that it tastes deliciously!
Let it get cold in the oven.
